Day 246 - Hands on potatoes

Marianne's hand is putting the finishing touch on "twice-baked potatoes". She makes a batch of these every few months and freezes them. She baked the potatoes, sliced them in half, scooped out most of the potato into a bowl. The she added cream cheese, butter, half-and-half, salt and pepper; then mixed it all up and put back in the skins. Topped with cheddar cheese and into the freezer they went. We'll put them in vacuum seal bags after they are frozen. The second baking comes later when we pull them out of the freezer and put them back in the oven (microwave will also work) to get hot. Top with bacon bits and we have a delicious baked potato with our meal. Next on her stove will be baked potato soup - another of our favorite fall meals.

PS: She made the potato soup and has enough potatoes for another pot full!

Dinner is in the oven starting to make the house smell yummy. My last meal was breakfast and my teeth are threatening to eat my tongue. So I think I'll blog to distract myself. Thanks, Lew. You're a big help.

She canned potato soup? I never thought of that and it is something my mom probably didn't think about either. A great idea. My wife of 53 years sometimes makes twice baked potatoes. Your photos of this process are very nice.

Good luck in scanning your color slides. I did it with a Canon scanner that has that attachment but I had so many that I just too the slides to a camera store and let them do it. My scanner will only do three slides at a time.
